Tangy Pickled Veggies to Put on Almost Anything
Peter Piper picked a peck of pickle peppers, a peck of pickled peppers Peter Piper picked… Yes I can actually say the whole tongue twister, fast. What does that have to do with anything you might wonder? Well, I’m a little behind because the post from Smitten Kitchen that’s inspiring this has been up a while, but I recently tried the recipe for pickled vegetable sandwich slaw. Deb used a whole range of rainbow veggies and (of course) pickled them. I recently tried the recipe and now believe that pickled veggies belong on everything; particularly my favorite pickled peppers.
As Deb mentioned at the start of her post that this recipe is worth giving a shot even if your not a “pickled” person, (Which I’m generally not. I don’t even really like pickles unless they are spicy pickles!) and boy was she right! This just worked for me. Pickled veggies have already graced many of my husband’s sandwiches and been a terrific topper on salads. I’m playing with the idea of adding this to a pot sticker filling. I’ll let you know down the line how it turns out.
I should definitely add that while cooking I ran out of the correct pickling liquid ingredients for the original recipe from Smitten Kitchen. So I did one jar following the recipe and three more with my own variations. The winner from what I played with:
- 1 cup rice wine vinegar
- 4 tablespoon sugar
- 2 tablespoon kosher salt
- 1 tablespoon Sesame Seeds
- 1/2 teaspoon fresh shredded ginger
The veggies not only soak up the pickling liquid but the ginger as well. Everything gets that wonderful ginger flavor. I actually think picking just a jar of ginger might be on the agenda at some point.
A final thought I have to add, here are five other places that pickled veggies have made an appearance at my house:
- Quesadillas. Corn tortillas, mexican cheese blend, pickled veggies. Absolutely amazing! The tangy veggies just compliment the salty cheese to perfection.
- Chicken Salad. Diced up really fine pickled veggies add a great bite to your chicken salad recipe.
- Pulled Pork Sandwiches. I love pulled pork any which way, but big slices of pickled veggies really shake up an old favorite for me. I actually really like my ginger version with the pork.
- Hotdogs. Kind of a play on relish. Really yummy.
- Tapenades. This makes for an interesting twist when substituted for some other veggie in your favorite recipe.
