“Super” Creamy Corn Dip
Kim has us over a while back and made her “Super” Creamy Corn Dip to snack on before dinner. I was instantly addicted and promptly demanded she share her recipe! (So here we are!) The combo of sweet corn, creamy cheese, and that jalapeño kick is just one of those perfect flavor blends. I think this “super” dip is the perfect snack for your Super Bowl Party this weekend. Serve it with Fritos, tortilla chips, or even crackers.

- 2 cans shoepeg corn
- 1 cup mayo
- 1 cup sour cream
- 8 oz shredded Colby jack cheese
- 1/4 purple onion, chopped
- 2–4 jalapenos, seeded and chopped
- 4 oz canned green chilis
- 1 tsp chili powder
- 1 tsp garlic powder
Instructions
- Combine all ingredients, adding jalapenos according to preference.
- Refrigerate until ready to serve.
