Best midnight snack ever! (Or a pretty awesome lunch!)

My husband is wonderful. The other night I was hungry, needed a snack, but was in that I have no idea what to eat mood. He sat patiently with me and listed one by one every possible item in the kitchen I could possibly eat, as I so helpfully said, “No, no, nope not that, no….”  Eventually he offered to make me a grilled cheese. Finally from me, “Yes! Yum that sounds great.” Because when does grill cheese not sound great? I totally should be going to some type of carb addicts meeting.

 I had some Dofino Smoky Havarti in the fridge. (No this is not a sponsored post, I just really like Dofino Havarti.) My husband decided to use it for my grilled cheese. And in that moment brilliance was born. 

Creamy smoky havarti, thick slices of fresh french bread, lots of butter.  

Brilliance.

I’m not going to write out a recipe because I pretty much gave it to you right up there. The cooking directions in case you didn’t guess by now are to grill the sandwich in a hot pan until the cheese melts and the bread browns. But I’m pretty sure you knew that. If you don’t have smoky havarti any creamy havarti will make for a fantastic grilled cheese. Though I have to say the smoky flavor is totally worth a trip to the grocery store. 

But back to my original point: brilliance. Make this for lunch today or your next midnight snack, I promise you won’t be disappointed.
