I’m excited to share Making Artisan Pasta by Aliza Green with you. If you enjoyed my post Homemade Pasta 101 you are going to love this cookbook! This book has solid step by step (with photos!) advice to help anyone interested in entering the world of homemade pasta. Green begins her book with an in depth look at the major pasta ingredients, water, eggs, and flour.
After reading this section you will be surprised to learn there is a lot you don’t know about these basic ingredients. You just wouldn’t think flour could be so complex. But this background can really help your home pasta making by giving you the knowedge to select the right ingredients for your pasta projects.
Even if you just don’t care that much about flour and want to get on with the pasta making, I still do highly recommend this book! Basic egg pastas, alternative flour pastas (i.e. buckwheat, rye, cornmeal…), flavored pastas (spinach, squid ink, and more!), dumplings, cut pastas, hand formed specialty pasta shapes, stuffed pastas, and sheet pastas (lasagna, etc.) are all covered. Techniques are shown with plenty of helpful and quality photos. You could probably start an artisan pasta production company after working your way through this book cover to cover. I will say most of the pastas covered in this book are of the Italian tradition, though there is a quick run down on Asian noodles and many other countries and backgrounds are represented by at least one noodle recipe.
So go…buy…. get your pasta on!
