Icebox Birthday Cake
My youngest is an October birthday, and is turning one this year! My little one loves ice cream so it didn’t take long to figure out what type of birthday cake to make him… An icebox cake. An icebox cake is usually a summer desert. (And I guess technically made from cream not ice cream, but I kind of lump ice cream cakes in to the same category. You just put ice cream cakes in the freezer instead of fridge. You know?) So when your little one loves ice cream, and his birthday rolls around, what are you going to do?
Make an ice cream cake in October of course!
How do I know my little one loves ice cream? Well Grandpa, Grandma, Big Brother and Dad, have been know to sneak him a taste of desert from time to time. Ok I confess I totally do it too! He’s a fan of pretty much all sweets but if you give him a taste of ice cream and don’t quickly give him more, he wails. And I do mean wails! Not so for any other desert.
I was actually really surprised to discover how much he loves ice cream because my older son is totally weird about temperature. Since about nine months if you give hims something even vaguely luke warm or frozen he makes the most horrid face, does a wild little dance, and waves his hands emphatically, yelling hot hot, or cold cold! So goofy. So after four years of making sure all food served to my oldest is “not too hot, not too cold, just right…” I was pleasantly shocked to discover some kids eat both warm and cold food!
But anyhow back to the icebox cake… Cookies, ice cream or whip cream, and sooo easy what’s not too love? Here are three fantastic recipes from this past summer. So go ahead and get your ice cream fix in October.
