Cauliflower Waffle Bites

The possibilities are endless with this simple Cauliflower Waffle recipe. You could add different veggies, spice it up, or even add meat. I used these as a base for taco toppings, which made for an awesome taco night alternative. They are also great for breakfast with eggs. These waffles are an excellent replacement when you’re wanting a starchy side but not the extra carbs, like bread or potatoes.

Ingredients

  • 2 cups cauliflower
  • 1 cup broccoli
  • 1 1/2 cups shredded cheese
  • 1/4 cup green onion (chopped)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt and pepper
  • 1 egg

Instructions

  1. Cut cauliflower and broccoli and place in a food processor.  

This recipe will use an entire head of small cauliflower and 1/2 of a larger cauliflower

  1. Place in a microwave safe dish and microwave for 5 minutes
  2. Lay out a clean kitchen towel and carefully spread the veggie mixture in the middle of the towel to cool faster.  After it has cooled to handle, wring out all the juice.  
  3. Preheat waffle iron
  4. Add the remaining ingredients to the cauliflower and broccoli and combine.

If you feel your mixture is too wet after removing the liquid, you can add a few tablespoons of almond flour to help hold it together.

  1. Place a 1/4 cup of mixture into each waffle iron section.  Cook for 4-5 minutes until it is brown. Remove with a fork and repeat with the remaining cauliflower.
