Cake Batter Confetti Cookies

There is nothing better than a fool proof cookie recipe.  A friend shared this one with me several years ago and I’m sure I have made them a bazillion times since. They are so easy, so moist, and always a crowd pleaser.  The addition of cake and pudding mix makes takes these cookies to the next level of deliciousness.

Ingredients

Scale
  • 3/4 cup butter (softened or melted)
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 3.4 ounce instant vanilla pudding mix, dry
  • 3/4 cup yellow cake mix, dry
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1/2 cup sprinkles

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine softened butter and sugars.
  3.  Add in pudding and cake mixes. Then add in eggs and vanilla and mix until incorporated.
  4. In a small bowl, combine flour, baking soda, and salt.  Add to the wet mixture.
  5. At this time the batter is pretty thick, so I turn off the mixer and clean off the batter from the attachment.  This helps sprinkles to evenly incorporate in the batter.
  6. Roll into 1″ balls and place on greased cookie sheet.  Bake for 10-12 minutes until slightly brown.
