Best of Summer Round Up
It’s still summer, but we all know, fall is fast approaching. But I say, we might has well keep savoring those sweet berries, fabulous fresh veggies, and perfect burgers as long as we can! Here are some of my faves lately, from around the web and right here at home, that will help you enjoy those summer delights, and hold onto the season a little longer.
One of the best things about summer, is the abundance of fresh, flavorful veggies, both at the farmers market, and at the local grocery store. But, what to cook with all those veggies? There’s always salads. From plain old lettuces, to the Green Monster, to Herbed Quinoa Garden Veggies Salad, there are a lot of choices. There are Salads For the Reluctant Salad Eater. Or manly salads like Boozy Chipotle Chicken And Quinoa Salad. Like I said choices.

These recipes step away from the salad format, but still use a respectable amount of those summer veggies: Easiest Fridge Dill Pickles, Caramelized Corn and Heirloom Tomato Galette, Honey Ginger Tofu and Veggie Stir Fry, Ratatouille and Zucchini Pasta. Isn’t that galette making you drool right now? Yep me too.

It wouldn’t be summer without the meat! Pulled pork, BBQ Chicken, lamb burgers, or a serious steak all do the job! (You know I like my meat! It just doesn’t feel like a proper BBQ without the meat. Sorry rabbit friends!)

Of course we can’t forget the sweet, sweet desserts: Sweet Balsamic Strawberries With Whipped Ricotta Cream an Maple Glazed Seeded Nuts, GF Cherry Clafoutis, or Blueberry Scones all could do the job for me! All three recipes make good use of that sweet summer fruit; and who doesn’t love a good fruity summer dessert?

Or you could try some of that fruit out in a Rose Sangria, it’s like dessert, but you get to drink it with dinner. Obviously you can’t go wrong with that!
