I struggle with my weight and as a result I’m always trying to make myself eat a little healthier. Salad is one of those foods I know I should eat a lot of, but I kinda hate it. Ok maybe not hate, but plain Jane salad just doesn’t work for me. And honestly if I don’t really like something I might eat it once but it won’t happen regularly… aka a salad.
I’ve finally decided salad is kinda like the dorky girl in movies in need of a makeover (i.e. She’s All That). Once the makeover is complete: bombshell! So I’ve been working on jazzing up and actually eating salad… I’ve discovered fruit, nuts, and a good dressing actually can make a salad worth eating. So here are my two simple (these are for lunch after all) yet bombshell salads I’ve been eating for lunch lately:
Spring mix, balsamic vinaigrette, sliced strawberries, pecans, and feta. (Bulk it up with grilled chicken!)
Super Simple Balsamic Vinaigrette: (Enough for one salad)
1 TBSP balsamic vinegar (I like Bertolli, it’s kinda sweet)
4 TBSP olive oil
Whisk it together, toss with your salad.
Iceberg wedge, blue cheese dressing, blue cheese crumbles, and bacon.
Blue Cheese Dressing: (one salad)
2 TBSP sour cream
3 TBSP mayo
1/8 tsp Worcestershire
A tiny sprinkle of: garlic, salt, black pepper
1 oz blue cheese crumbles
Whisk together all ingredients. Chill for 24 hours before using.

BTW it doesn’t hurt to pair any of these with a little piece of bread… what can I say carb girl here!
