My review of The Bread Baker’s Apprentice, 15th Anniversary Edition: Mastering the Art of Extraordinary Bread by, Peter Reinhart is long overdue. This book was published quite a while back, however, I still absolutely recommend it for anyone looking to learn their way around baking a loaf of bread at home! I feel this book is a perfect introduction for someone new to the fun of bread making. The book is very detailed while still offering relatively easy to follow instructions in the recipes. There is also plenty of background on how the bread making process actually works, from the yeast to the oven. But, possibly best of all for the newbie, are the plentiful of photos, charts, and definitions that really help you pick up the kind of details one doesn’t automatically learn from just following a recipe. I personally feel this kind of information can end up being very helpful in understanding the process of bread making when you are just starting out and save a lot of random Googling. However, I will note that a more experienced baker may find these types of sections to be unnecessary and just want to use the recipe portion of the book.
I also really like the breadth of the different recipes available in the book. I feel like you can find a decent recipe for most of your basic breads. Sourdough, rye, cinnamon buns, english muffins, wheat bread, Freanch and Italian bread, challah, bagels…. the list goes on and on… if you want to make it, it’s probably in there.
I know this review has been short, but I think I’ll try to keep it sweet by not going on and on. Let me just close by summing my opinion up in one quick sentence- If you’re new to bread baking but would like to learn the down and dirty and maybe the floury of bread baking; and start turning out some great loaves in your own kitchen, give The Bread Baker’s Apprentice a try.
