Healthy Fried Cauli “Rice”

I made this for dinner and my husband didn’t even know it was cauliflower! This is one sneaky food trick that really works in our family. This recipe is loaded with veggies so add in your favorite meat and make it a full meal.

Ingredients

  • 1 tbsp sesame oil
  • 1/2 cup green pepper (chopped)
  • 1/2 cup onion (chopped)
  • 1/2 cup carrot (chopped)
  • 1 cup broccoli (chopped)
  • 1/2 cup frozen edamame or peas (cooked and shelled)
  • 1 tsp garlic (minced)
  • 2–3 tbsp liquid aminos or soy sauce
  • 10 oz frozen cauliflower (riced)
  • 2 eggs

Instructions

  1. Heat sesame oil in a large skillet. Cook onion, carrots, pepper and broccoli for 5-8 minutes, until cooked through.
  2. Microwave cauliflower and edamame according to package directions.
  3. Add the remaining ingredients except eggs to the cooked veggies.  Start with 2 T of liquid amino and add more to taste. Cook together until heated through.
  4. Push veggies to the side of the skillet.  Add whisked eggs and scramble.  Once cooked, combine with the rest of the skillet.
