True fact, when your husband takes his first bite of this creamy pesto chicken sandwich, he will groan audibly with delight. This chicken was so easy to make in the crock pot and so versatile in serving options. I made it as a hot, cheesy sandwich (which was a huge hit). You could also serve it over your favorite starch or cauliflower rice. One day I heated leftovers over a skillet of cooked veggies and it made a healthy lunch. With just a few store bought ingredients and some hassle free cooking in the crock pot, you’ve got yourself a crowd pleasing dinner. This recipe makes 6-8 sandwiches, so it would be great for a party or large crowd. Try it with your favorite jarred pesto or try this homemade pesto recipe.
